Potatoes form the base of most of the recipes in India. Potatoes are low in fat and very rich in potassium and fibers. Raw potatoes are also used for cleansing up your skin. Potatoes are used as vegetables in most of the curries and gravy.
Simple potato vegetable
Potato (Aloo) :- 250 Gms
Oil : – 2 tbsp
Turmeric (Haldi) powder : – ¼ tsp
Green chili : – 2 nos
Curry leaves (Kadi pata): – 4-5
Mustard seeds (Rai) : – ½ tsp
Salt : – as required
Method of Preparation
1) Take the potatoes, boil it, peel it and cut it into cubes.
2) Take a pan, heat oil in it and add the green chilies, curry leaves and mustard seeds. Let them splutter. Once done, add turmeric powder, salt, and potatoes in it. Put little water in it, the potatoes will soak the masala. Keep boiling it for close to 5 mns.
3) In case if you want it to taste little different, you can use the cumin seeds instead of mustard seeds.
